What is the most important part in making a consome? I say the raft

Band Saw didn't work to day. It was put together improperly, Not only scared the crap out of me but I got to cut this Rib Eye by hand. It was one of the highlights of my day.

The New Line.

I didn't see an immersion thermal circulator or the ( Fluffer ) on stations before this past year.  The culinary world is changing a lot. It is almost like cheating, we have gotten so many great comments on steak.  Sous Vide in Butter on pick up herb salt,  cook on Pecan wood grill,    Done.
