Anniversary.

Today is our fifth Anniversary of marriage.  Hard to believe it have been five years since we where at Caesars Palace the Time goes by so fast now.  Our Anniversary means allot to both of us and we celibate it,  We always watch own wedding video, that's the only reason we still have a VCR.  We go have a nice dinner some where this year its Bacchanalia.  Jest a great day to really enjoy each other and remember the past and talk about were we will be on or next anniversary.

200g        Yuzu.
675g       Water.
75g         Glucose.
300g       Sugar.
2ea.        Gelatin Sheets.

Urban Gardening.

Urban Gardening has been going on for a long time even more so now in these times. This was about two mouths ago. We now get all or mint and basil from the garden.

Macaroons.

Funny being put in different situations like having to make macaroons, I have not made this in about eight years.  I think they turned out great. this was a great opportunity to pull out the recipe  book that I wrought when I lived in France, I spent a lot of time in that pastry Kitchen. Under a crazed Rugby Playing, soft spoken, passive aggressive, Hell of a chef, named Sedrik. Best Macaroons I think.

750g    Almond Flour

750g    Powder Sugar

250g    egg whites (Fresh)

700g    Sugar

50g     Glucose

250g    Whites

150g    Water

Sift the almond flour, powder sugar

with hand add whites to the flour and mix until a paste

Cook sugar, glucose and water to 121C.

Slowly pour into fast beating whites

Fold meringue into paste

Pipe

Back @ 275-300F (Depending on Oven)

15 Min.

Chocolate

Omit 50g of Flour mixture

add 50g of cocoa powder

add 5 drops of red food coloring to meringue.

My Snail Egor Just passed, Never Thoth that I would have him that long.  I found him in a box of Kale last February .  Brought him home and said to my wife I have got an Escargot, She thought I was going to cook him. I loved to see what he liked to eat like Tomatoes, Cabbage. He did not like Spinach.  He cracked his Shell about two months ago in a great escape.  Egor will be missed.
