In writing my blog many people say, "Really?” and are surprised by it because writing is not one of my strengths by any means. But one of my strengths is being driven, so much so that I like to turn my weaknesses into my strengths.
While at the Culinary Institute of America in New York, I failed French…twice and it was the only class I have ever failed. So after graduation I moved to Chambery, France for six months to work under Master Chef Jean Michel-Bouvier and strengthen my French.
After coming back to the states, I did not believe my art in fish cutting. So I got a second job as a fish monger at a local market and for 8 months I crafted that art diligently and now I have no patience for shoddy fish work.
As a cook working in restaurants I carry a note book in my pocket at all times, and through the years I have built quite of a collection of them, but some of I have lost along the way. I think this is a great opportunity for me to improve myself not only in my cooking, but in my writing too. I guess you could say, this is my digital notebook.
